Fresh pesto

While I was at the local fruit and veg market, I spied ginormous bags of fresh basil for $1.75. That's a good $2.24 less than at the supermarket, and it's frankly for more product.

Tonight, I'm making pesto, and the house smells amazing. Once it's done, it will be mixed with hot pasta, leftover roast chicken, and some peas for a delicious dinner.

Here's the recipe I'm using:

2 c. basil leaves, packed
3 cloves garlic, peeled
1/4 c. pine nuts
1/2-2/3 c. extra virgin olive oil
kosher salt and fresh-ground black pepper to taste
2/3 c. grated Parmesan cheese

Put the basil leaves, garlic cloves, and pine nuts into the food processor and whirl around for a while. Add the olive oil while running to get the right consistency, starting with 1/2 cup and adding more if needed. Remove the pesto from the processor and stir in salt, pepper, and cheese.
